Enjoy this delicious Fried Lemon Butter Catfish prepared with Desert Harvest’s freshly harvested ingredients!
Ingredients:
- 2- 4 Desert Harvest Catfish fillets
- 1 tsp Desert Harvest Thyme, dried
- 1/2 tsp salt
- 1/4 tsp pepper
- 4 tbsp unsalted butter, divided
- 1 lemon, sliced
Directions:
- Rinse the Desert Harvest Catfish fillets and pat them dry with paper towels. Set them aside.
- Mix the thyme, salt, and pepper in a shallow dish.
- Melt 2 tbsp of butter in a large skillet over medium heat.
- Dredge the catfish fillets in the cornmeal mixture, shaking off any excess.
- Once the butter is melted and starting to foam, place the fillets in the skillet and cook until golden brown, about 3-4 minutes per side.
- Remove the catfish fillets from the skillet and set them on a plate.
- Add the remaining 2 tbsp of butter to the skillet and let it melt.
- Add the sliced lemon to the skillet and cook for 1-2 minutes, until they soften and caramelize.
- Pour the lemon butter sauce over the catfish fillets and serve hot.
