Fried Lemon Butter Catfish

Enjoy this delicious Fried Lemon Butter Catfish prepared with Desert Harvest’s freshly harvested ingredients!

Ingredients:


  • 2- 4 Desert Harvest Catfish fillets
  • 1 tsp Desert Harvest Thyme, dried
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 4 tbsp unsalted butter, divided
  • 1 lemon, sliced

Directions:

  • Rinse the Desert Harvest Catfish fillets and pat them dry with paper towels. Set them aside.

  • Mix the thyme, salt, and pepper in a shallow dish.

  • Melt 2 tbsp of butter in a large skillet over medium heat.

  • Dredge the catfish fillets in the cornmeal mixture, shaking off any excess.

  • Once the butter is melted and starting to foam, place the fillets in the skillet and cook until golden brown, about 3-4 minutes per side.

  • Remove the catfish fillets from the skillet and set them on a plate.

  • Add the remaining 2 tbsp of butter to the skillet and let it melt.

  • Add the sliced lemon to the skillet and cook for 1-2 minutes, until they soften and caramelize.

  • Pour the lemon butter sauce over the catfish fillets and serve hot.
